heat the oil in a pan, then fry the onions for 5 mins until soft

add the chopped courgettes, tomatoes, chickpeas, raisins and stock, then bring to the boil. cover and simmer for 10 mins.

stir in the peas and simmer for 5 mins more.

pour 400ml boiling water over the couscous, then stir in the harissa with 1/2 tsp salt. tip in any extra raisins / chickpeas, then cover for 5 mins

fluff up couscous with a fork and serve
