Slice and peel sweet potatoes into slivers, no thicker than 1/2 inch

Soak potatoes in water, at least 1 hour, or all day if able.

Preheat oven to 425*

Prepare cornstarch and cinnamon in a ziplock bag.

Shake excess water from potatoes, drop into ziplock, shake to mix well.

After fries are coated, pour a bit of olive oil into ziplock. Shake to coat.

Pour olive oil in bottom of pan. Line with potatoes, careful not to overcrowd.

Sprinkle brown sugar over fries.

Bake 15 minutes. Turn fries, and bake another 5-10 minutes (dark pans, check early).
