1. Saute bacon in large pan until crisp. Remove bacon from pan and drain all but one tbsp of fat.

2. Add ground meat and saute until it has changed color.

3. Add bacon, onion, celery, bell peppers and garlic. Saute over low heat for 5 minutes. Then add all the spices and cook for additional 3 minutes.

4. Stir in the rice and cook for 5 minutes. Add 4 cups of liquid and black beans. Bring to a boil, reduce heat, cover and simmer until liquid is absorbed. This time depends on the type of rice used.

5. Let stand for 5 minutes.
