Peel and chop the apples. Place them in a saucepan and pot in enough water to just cover the apples. Split the vanilla pod and put it in the pan. Add all other ingredients to the pan.

Bring to light boil then lower and simmer for 10-15 minutes. Allow to cool then blend into a purée. Serve with roast pork.
