Heat a small frying pan very hot over the hob

Add two eggs, pop yolks, allow to partially cook.

Add soy sauce

Sprinkle on half of the sugar (to taste)

Fold over so they cover only half the pan

Do same to the other two eggs on the remaining side of the pan

Add more soy sauce

Sprinkle on the other half of the sugar (to taste)

when partially cooked fold over onto other eggs

Fold the whole lot so it looks a little like a folded crepe (pancake)

Turn it all over

Allow eggs to fully cook then remove onto a plate

Sprinkle some soy sauce and sugar on top (to taste)

Cut into bitesize pieces
