Heat oil in casserole dish with bacon. Add onion, garlic, celery, squash and carrot and cook for 15 minutes until soft.

Add mince and cook, stirring for 10 minutes.

Turn heat up, pour in wine and simmer for 5 minutes. Add tomatoes and 2 tins of water. Season with rosemary, bay leaf and salt and pepper. Bring to the boil and simmer for 1 1/2 hours covered. If still liquid simmer uncovered

Can be kept in the fridge for 3 days or in the freezer for 2 months.
