Ingredients

12 servings
  • 4 tbspOlive Oil
  • 6 sliceBacon
  • 2Red Onions, finely chopped
  • 2 cloveGarlic
  • 2 stickCelery
  • 1Butternut Squash, chopped
  • 3Carrots
  • 750 gramsPork Mince
  • 750 gramsBeef Mince
  • 2 cupRed Wine
  • 5 canTomatoes
  • 3 bunchFresh Rosmary
  • 1Bay Leaf
  • 1Sea Salt
  • 1Ground Black Pepper

Steps

  1. 1

    Heat oil in casserole dish with bacon. Add onion, garlic, celery, squash and carrot and cook for 15 minutes until soft.

  2. 2

    Add mince and cook, stirring for 10 minutes.

  3. 3

    Turn heat up, pour in wine and simmer for 5 minutes. Add tomatoes and 2 tins of water. Season with rosemary, bay leaf and salt and pepper. Bring to the boil and simmer for 1 1/2 hours covered. If still liquid simmer uncovered

    Can be kept in the fridge for 3 days or in the freezer for 2 months.
