My friend Emil Dzuick makes this sausage every winter and I am lucky enough to be on his list of people he gifts this to. The dish is an old family recipe of my grandmother's but I have modernized it adding coriander and baby carrots.

Ingredients

  1. 1 lbPolish Sausage
  2. 12 smallRed Potatoes
  3. 5 cupGreen Cabbage - Shredded
  4. 4 ozBaby Carrots
  5. 1/4 cupOlive Oil
  6. 2 tspGround Coriander
  7. 2 tbspApple Cider Vinegar
  8. 4 tbspButter
  9. 1Salt and Pepper
  10. 1/2 largeOnion - sliced thin
  11. 5 cloveGarlic - Minced

Cooking Instructions

    Rinse potatoes and place in a medium saucepan. Add water to pan until potatoes are covered by 1 inch. Add about 2 tsp of kosher salt and bring to a boil. Boil for 5 minutes, then turn heat off cover and let sit while making the cabbage.

    Cut sausage into 3 inch pieces.

    Heat a large frying pan over medium high heat, add olive oil. When oil is heated add onions and carrots. Saute for 2-3 minutes until onions are translucent.

    Salt and pepper onions and carrots if desired. I add about 1/4 tsp of salt at this point.

    Add coriander and garlic and saute for 30 seconds to a minute. Add cabbage and saute until it starts to wilt. Add butter, apple cider vinegar, salt and pepper to taste and stir to coat cabbage and carrots.

    Add potatoes and sausage to cabbage, cover and cook for 15 min over med low heat.

    Serve immediately and enjoy!
