Saute the chopped onion, chopped green pepper, chopped celery and long grain rice in oil until rice and onion start to brown.

Placed the chopped tomato in a measuring cup and add enough boiling water to make 2 cups (Lois adds water to make 1-3/4 cups).

Stir & immediately cover and turn heat to low.
