Ingredients

  • 2 lbChicken breast
  • 1/2 envelopeTaco seasoning
  • 1 smallOnion, chopped
  • 2 cloveMinced garlic
  • 1 canChicken broth
  • 2 canRed enchilada sauce (10oz)
  • 4 cupMonterey Jack cheese
  • 1Salt, pepper
  • 10Tortillas

Steps

  1. 1

    Bake chicken breasts I taco seasoning, garlic and chicken broth in oven at 350 for 40min

  2. 2

    Shred chicken with fork

  3. 3

    Add enchilada sauce to broth from pan

  4. 4

    Combine shredded chicken, salt, pepper, cheese and 1c enchilada sauce mixture

  5. 5

    Warm tortillas in microwave and dip I enchilada sauce mixture

  6. 6

    Fill with chicken mixture and place seem side down in 9x13 pan

  7. 7

    Repeat

  8. 8

    Pour remaining sauce over tortillas

  9. 9

    Top with more cheese if desired

  10. 10

    Bake at 350 for 25-35min
