Knead the dough and let it rest for about 1 hour.

Clean the thyme and spinach.

Chop the spinach and onions into small cubes, then season with salt, vegetable oil, ground red pepper, citric acid (or lemon juice), and cumin. This is your spinach filling.

Pick the thyme leaves, wash and dry them well, then season with chopped onions, ground red pepper, cumin, citric acid (or lemon juice), vegetable oil, and salt. Mix well.

Divide the dough into large pieces, roll out with a rolling pin, and cut into circles using a dough cutter. Fill with your chosen filling and place on baking trays greased lightly with oil, brushing a little oil on top of the dough as well.

Preheat the oven while you are filling the dough. Bake in the oven until golden brown. Enjoy!
