Preheat the oven for 350°F.

In a large bowl, combine the egg, oil, milk, and vanilla.

In a separate bowl, sift the flour, sugar, baking powder, and salt.

Add the flour mixture to the wet ingredients.

Spoon the batter into the muffin pan lined with some parchment wrappers.

After its baked, cool on the wire rack, and let it cool completely before you can frost.

This is a really good recipe for butter free vanilla cakes however I do have my doubts about the amount of baking powder used, the recipe calls for 2 1/4 tbsp (tablespoons) of baking powder and if double that is 4 1/2 tablespoons of baking powder, generally it would be 1 tbsp or in tsp measurements in the recipes I have come across.
But besides that the recipe creates very moist and fluffy and enjoyable cupcakes
