Ingredients

  1. Cubed eggplant
  2. Cubed potatoes
  3. Chopped carrots and zucchini
  4. Olive oil
  5. For the blender:
  6. 1medium onion
  7. 2garlic cloves
  8. 1 tablespoonginger
  9. 2hot chili peppers
  10. 1 tablespooncurry powder
  11. 1 tablespoonturmeric
  12. Salt to taste
  13. 1 cupwater (about 240 ml)
  14. Parsley for garnish

Steps

  1. 1

    Sauté the vegetables with olive oil until they are halfway cooked.

  2. 2

    Blend all the blender ingredients together, then pour the mixture over the vegetables. Cook until the vegetables are tender.

  3. 3

    Sprinkle half the parsley over the vegetables, stir, and immediately turn off the heat.

  4. 4

    Serve and garnish with the remaining parsley.
