Cooking Instructions

Cut peeled potatoes into chunks and cook until fork tender then drain. While the potatoes are cooking boil the eggs. While the eggs are cooking dice up the 1/4 onion and add to the chilled potatoes.

When the eggs are done..peel and add to the potatoes and onions. Add mayo to all three ingredients according to your desired consistency.

Mix together mashing the potatoe and eggs so they they still have a few chunks. Last add about 1-2 tbsp of mustard. Salt and pepper to taste.

Refrigerate for at least an hour but longer if possible.
