Ingredients

  1. Marinade
  2. 3/4 cupoil
  3. 2 mediumlimes;juice and zest
  4. 2 clovegarlic
  5. 2 tspSugar
  6. 1/2 tspsalt
  7. 1/4 tsppepper
  8. 1/2 cupcilantro - chopped
  9. Rice
  10. 1 cupuncooked rice
  11. 1 canchicken broth
  12. 1water
  13. 1 tbsplime juice
  14. 2 tspSugar
  15. 3 tbspcilantro - chopped
  16. 2 clovegarlic - minced
  17. Creamy Tomatillo Dressing
  18. 1 packagesprepared buttermilk Ranch dressing
  19. 3 mediumTomatillo - quartered
  20. 1handful cilantro
  21. 1 mediumjalapeño
  22. 1 mediumlime, juice of
  23. 1 smallcontainer of sour cream

Steps

  1. 1

    put all ingredients for marinade in blender to chop

  2. 2

    mix sugar, line juice, cilantro in a bowl

  3. 3

    mix above with rice

  4. 4

    for creamy dressing: blend all ingredients in blender with salt and pepper to taste. Chill for 2 hours.

  5. 5

    To create bake: layer cilantro Lime rice, then chicken, then sour cream, cover the top with shredded pepper jack cheese.

  6. 6

    Bake at 350 until heated through, about 20 minutes. Then turn on broil until the cheese crisps a little. When serving, drizzle tomatillo dressing on top.
