Ingredients

  1. 1 1/2 kgclams
  2. 1 tbspbutter or oil
  3. 2 cuponion, chopped
  4. 1 tbspflour, or adjust to desired thickness
  5. 1 cupdry wine, or 2 tbsp white vinegar
  6. 1 1/2 cupwater
  7. 1bay leaf
  8. 2sprigs of thyme
  9. 1/2 tspblack pepper
  10. 1 1/2 cupcorn
  11. 1 cupwhipping cream
  12. 2 tbspparsely, chopped
  13. 120 gramsbacon, cubed (about 4 strips)
  14. 1/2 tspold bay seasoning or paprika
  15. 1 cuppotatoes, diced
  16. 1 cupcarrots, diced

  1. 1

    clean clams. discard broken clams or those that remain open after touching

  2. 2

    steam clams in a large pot with about an inch of water until they all open up, about 5-10 minutes

  3. 3

    strain clam liquid and set aside

  4. 4

    separate and chop clam meat

  5. 5

    brown bacon in butter or oil, in a thick bottomed pot in medium heat

  6. 6

    add chopped onions and cook for about 5 minutes

  7. 7

    coat everything with flour and cook for another minute. slowly add white wine or vinegar

  8. 8

    add potatoes, 2-3 cups clam liquid, and 1 cup water

  9. 9

    add bay leaf, thyme, black pepper and seasoning

  10. 10

    boil then reduce to a simmer, cover and cook for 10 minutes

  11. 11

    add corn and cook for another 5 minutes

  12. 12

    in a separate saucepan, heat 1 cup of whipping cream until steamy. then slowly add to clam liquid mixture

  13. 13

    stir in parsely

  14. 14

    add clams when about to serve. top with croutons and a sprinkle of black pepper
