Rinse the dried grass jelly leaves 4-5 times with water to remove any dirt.

Boil the leaves with 8 1/2 cups (2 liters) of water for 2 hours, or boil for 30 minutes, then turn off the heat and cover tightly. Cooking time may vary depending on whether you use a gas or wood stove.

Remove the leaves and let them cool. Squeeze and knead the leaves thoroughly, similar to hand-washing clothes. The more thoroughly you knead, the thicker and more fragrant the jelly will be.

Collect the extracted jelly liquid.

Mix the tapioca starch with water, then pour it into the jelly liquid and stir well. At first, the jelly will thicken and turn brown. Keep stirring until it thins out to a honey-like consistency and turns black.

Pour the mixture into a mold and let it cool.

Serve as desired.
