Strawberry Glaze Cake

Pre heat the oven at 180°C and also keep the cake mould greased and kept aside.

Beat the eggs and essence until they are at ribbon consistency, and mix butter at room temperature with sugar using a whisk.

Shift refine flour and baking powder into the bowl containing the butter and sugar Incorporated.

Using a ladle stir well the dry and wet ingredients. Add milk to make the mixture runny in consistency but not too runny.

Now the batter is made, take the cake mould you had set aside at step 1 and pour the batter into it.

Tab the cake mould to release any air bubbles and bake at 'convection mode' on 180°C for 1 hour.

Let the cake cool down for a few minutes.

For strawberry glaze: cut strawberries into 1/4 or 1/2.

Heat a heavy bottom pan and add the strawberries and sugar into it.

Let it caramelized for few minutes to form a Glaze. As the water from strawberries will start to dissolve with the sugar.

Add lemon drops to the glaze for finish.

Pour the strawberry glaze onto the sponge cake and let it set inside the fridge.
