Heat up enough water in a pot; once the water is boiling hot, add basmati rice and parboil till its almost tender, wash and drain in a sieve and set aside

When preparing the vegetables: Wash all the vegetables. Dice the onion, peel the carrots and julliane, remove the seeds of the green bell peppers and dice.

Heat up the vegetable Oil; add the onion, after a minute add garlic and ginger, pepper and after 4minutes, add carrots, peas, red beans, then add a little curry, knorr cube to taste. Stir fry for 1 min and pour into a bowl.

The Rice is going to be fried in small batches, so you’ll have to divide the stir-fried vegetables into equal portions. The size of your frying pan will determine how many portions you will have. Pour a portion of the stir-fried mix into the frying pan; add the cooked rice and stir-fry for about 2 minutes. Repeat this process for the remaining

Allow to cook for another 3mins then turn off heat and serve with grilled chicken
