Ingredients

  • 3large coconuts
  • 2 cupsbeef stock
  • 2 sachetsEmma coconut powder
  • 2tablets of maggi crayfish
  • 2knoor cubes
  • 7 cupscups of rice
  • 1 cupcoconut oil
  • 2large spring onion (chopped)
  • Habanero pepper (Chopped)
  • 1large bonga (deboned and pounded)
  • 2 tablespoonsgrounded crayfish
  • to tasteSalt

Steps

  1. 1

    Remove the coconut from it's shell, grate and blend then extract the milk and set aside

  2. 2

    Parboil your rice and set aside

  3. 3

    In a cooking pot, add the meat stock, coconut milk then allow to boil, then add the maggi crayfish and knorr cube, taste and adjust the taste with salt

  4. 4

    Next add the parboiled rice, and start to cook, half way cooking, add the crayfish and pounded bonga then allow to cook till dry.

  5. 5

    In a large frying, add the coconut oil then allow to heat for fee seconds, add the diced spring onion then saute, at this point add the chopped pepper and fey for few minutes.

  6. 6

    Next transfer the cooked rice to the frying pan then start to stir on low heat for about five minutes, taste and adjust the taste with salt if necessary then bring down.
