Ingredients

15 minutes
15-20 servings
  • 1 canartichoke hearts (9 oz.)
  • 1 (10 oz.)bag frozen spinach bite size pieces
  • 2 Tbsp.olive oil
  • 1 cupdry white wine
  • 1large onion, chopped
  • 4 oz.softened gluten-free cream cheese
  • 2/3 cupshredded mozzarella
  • Dashpepper
  • Blue Diamond Nut-Thins

Steps

15 minutes
  1. 1

    Cut up artichokes after draining them.

  2. 2

    In large pot, sauté onions in olive oil until translucent. Add spinach and artichokes and cook about 5 minutes.

  3. 3

    Add wine, then cream cheese.

  4. 4

    Placed in 1 quart dish, top with mozzarella bake in preheated over at 350 degrees for 5 minutes until brown and bubble.

  5. 5

    Serve with Blue Diamond Nut-Thins.
