Stuffed Pepper with Goats Cheese

Cut Pepper in half, brush with olive oil and bake in the oven at 200 °C for 15 mins or until starting to colour

While pepper is cooking chop the onion and garlic and fry with a little oil for 5 mins
- 4
Add the tinned tomatoes to the onion and garlic and cook for another 5 mins on a medium heat

Add the cooked boiled rice, coriander, pinch of salt and pepper and cook for a further 2 mins
- 6
Spoon the mix into the pepper halves and top with the goats cheese. Cook for a further 15 mins at 200°c or until the cheese starts to colour and melt
