If somebody asks whose face always roams in your mind I would say my mother's .
Mother's touch is everywhere. In my personality,in my thinking, in my looks .Because I am the part of my mother.
My mother used to make baingan bharta very yummy. She bhunoed baingan in the heat of desi choolah and then cooked it in mustard oil.She did not use tomatoes instead she put amchoor for sourness.Thanks Maa

Wash and smear baingan with oil and roast it on medium heat. Roast it from all sides When it is plumpy switch off the gas.

Put it in cold water and take out the peel.Mash the brinjal.

Heat the oil in kadhai. Add curry leaves and cumin seeds when it crackles add chopped onion,chilli ginger garlic paste.Bhuno it.

Now add all spices just fry them.

Add mashed brinjal and salt. Saute it well till oil oozes out.

Add garam masala and aamchoor.

Garnish with chopped corianer leaves.

Serve.
