5-Ingredient Banana Cake - Very Yummy

This started with leftover Sunpride bananas that my youngest doesn't like at all. Tried several times, still no luck... haha. So, as they started to get mushy, I began searching for a simple recipe. Today, I was feeling a bit down about baking.
I was intrigued by the blog title from Ms. Endang JTT, '5-Ingredient Banana Cake that's very very very yummy'—tempting! Haha.
I executed it right away, super quick prep with just 5 ingredients, a short mix, and it was already baking. My nanny even asked, 'Oh, it's done already? When did you make it?' Haha.
The result was delicious, soft, and rich. I think the sugar might need a little more.
Here's the recipe:)

Steps
- 1
Preheat the oven to 350°F (180°C).
Prepare a loaf pan by lining it with parchment paper. :) - 2
Melt the butter until just melted, not boiling, to prevent the cake from drying out. ^^
- 3
Mash the bananas with a fork; do not blend them to maintain texture.
- 4
Beat the eggs and sugar until pale and fluffy.
- 5
Add the bananas and mix with a spatula, then gradually add the flour, mixing with a spatula again.
- 6
Finally, add the melted butter and fold in with a spatula.
Pour into the loaf pan.
I sprinkled chocolate chips on top. - 7
Bake for about 25-30 minutes, adjusting for your oven. ;)
When it starts to form a crust, I make a slit in the middle with a knife, then brush honey on the crust to make it brown and sweet. :) - 8
Yummy and healthy without any chemicals.

Hmmmm

Hmm.. I had two issues this time:
1) The bananas were too soft because I was chatting with my nanny. Next time, I'll leave some chunks. Haha.
2) When making the slit in the crust, I did it too close to the end. It's better to do it earlier when the crust is forming but the inside is still wet, so the batter can rise a bit (since this cake doesn't use baking powder/soda, which helps the batter rise).
Next time will be better. Haha. - 11
Ta-da! This is a basic banana cake recipe, without any chemicals. :)
