Ingredients

  1. 4Black cardamom
  2. 2Green cardamom
  3. 4Cloves
  4. 8-10Whole black pepper
  5. 1/2"Cinnamon stick
  6. 4Bay leaves
  7. 1/2 teaspoonWhole coriander
  8. 1 teaspoonCumin seeds
  9. 1/2 teaspoonTurmeric powder
  10. 2 teaspoonsCoriander powder
  11. 2 teaspoonsBiryani masala
  12. 1/2 teaspoonRed chilli powder
  13. 2 tablespoonsCashwes
  14. 2 tablespoonsRaisins
  15. 2Finely chopped onions
  16. 2Sliced onions
  17. 1Finely chopped potatoes
  18. 2Finely chopped tomatoes
  19. 1/2Chopped cauliflower
  20. 1Sliced carrot
  21. 1 cupGreen peas
  22. 1/2 cupBoiled soya chunks
  23. 1/4 cupFinely chopped beans
  24. 1/2Finely chopped green capsicum
  25. 1/2Finely chopped red capsicum
  26. 1/2 cupChopped coriander leaves
  27. 1/4 cupChopped mint leaves
  28. 2Chopped green chillies
  29. 2 tablespoonsGinger garlic paste
  30. 2 cupLong grain rice
  31. 2 tablespoonsCurd
  32. 2 cupRefined oil
  33. 4 tablespoonsPure Ghee
  34. 1 teaspoonRose water
  35. 1 pinchSaffron food colour
  36. to tasteSalt

Steps

    Take a wok and heat oil add cashwes and fry it well, then add sliced onions and fry them well until brown in colour, then fry potatoes, then fry cauliflower and carrots.

    Lessen some oil, then fry bay leaves, black pepper, black cardamom, cloves, cumin seeds, chopped onions, ginger garlic paste and roast it all well.

    Then add tomatoes and fry until soft, add turmeric powder, red chilli powder, biryani masala, ½ glass water and cover and cook.

    Now take a big vessel and add water, black cardamom, green cardamom, cloves,bay leaves and boil it all nicely.

    When totally boiled add soaked rice and cook until 70% then drain water.

    Take a heavy bottom wok, heat pure ghee and add cumin seeds, add rice then layer it with gravy then add mint leaves, coriander leaves, cashwes, raisins,fried sliced onions, pure ghee and again layer it with rice, cashwes, raisins, pure ghee, saffron which was soaked in rose water and then cover it with a plate and seal all over the plate with a dough and cook for 10 minutes on a low flame.
