Ingredients

25 servings
  1. 5 lbspotatoes peeled
  2. 4hard boiled eggs
  3. 1medium red onion finely chopped
  4. 6 tablespoonssweet pickle relish
  5. 7 tablespoonsyellow mustard
  6. 3/4 cupmayo
  7. Paprika

Cooking Instructions

  1. 1

    Boil potatoes until tender but firm. Drain

  2. 2

    Dice 3 boiled eggs, slice 1 to place on top

  3. 3

    Depending on the type of salad you want you can mash the potatoes for a smooth texture or leave diced for a chunky texture

  4. 4

    Mix potatoes, eggs, onion and relish

  5. 5

    Blend mustard and mayo together

  6. 6

    Pour over potatoes

  7. 7

    Sprinkle with paprika
