Pierce the eggplants all over with a fork.

Roast the eggplants over a gas flame or in the oven, turning frequently until the skin is charred and the eggplants are soft. Remove from heat.

Peel the eggplants and place the flesh in a bowl.

Mash the eggplant flesh with a fork, then add the tomatoes, onion, and parsley. Mix well.

In a small bowl, combine the dressing ingredients and pour over the eggplant mixture. Mix well.
