Steps
- 1
Heat oil in a saucepan. Add chopped onions and garlic. Let them cook on a low heat. Take care not to burn the garlic as it will make the whole dish bitter.
- 2
Add the chopped tomatoes together with the tomato paste and some salt. The salt will help the tomatoes to get ready fast. Add some water to avoid sticking and cook for about 5 minutes
- 3
Add the spices and a tablespoon of water and let it cook down for some more 5 minutes. By now the tomatoes will be saucy.
- 4
Add the coconut milk and the fish.. Let it simmer for about 3 minutes because the fish may break if it stays in the heat for long.
- 5
Once ready turn off the heat and add the chopped cilantro
- 6
Enjoy!!!
