First, prepare all the ingredients so you have everything ready. Heat a paella pan with a little oil and quickly sauté all the seafood on both sides. Remove the seafood and set it aside.

Sauté the chopped onion, tomatoes, and bell peppers in the pan. When the vegetables are soft, add the white wine and cook over high heat for 10-15 minutes until most of the liquid has evaporated. Then add the rice and fresh tomatoes, and stir to combine.

Next, pour in the water or seafood stock and cook over high heat for 10 minutes. Add salt, paprika, and the seafood. Stir and taste for seasoning.

Once the flavor is to your liking, turn off the heat and let it rest for 15 minutes. Ready to serve! (I boiled some eggs for garnish, but you can add whatever you like.)
