Ingredients

3 serves
  1. 300 gMatumbo
  2. 1 tspoil
  3. 1large onion
  4. 2large tomatoes
  5. to tasteSalt
  6. 1 TSProyco

Steps

  1. 1

    Wash Matumbo. Then put to boil for 3 hours when using a jiko but if using a pressure cooker, it should take 90mins.

  2. 2

    It should be soft after 30 minutes.

  3. 3

    Remove from heat, allow to cool then cut the Matumbo into small pieces. Dice the tomatoes too and onions

  4. 4

    In a clean pan fry the onions until golden brown, add in tomatoes.

  5. 5

    Stir until the tomatoes are mashed up then add in Matumbo and salt.

  6. 6

    Mix very well. Then add in a little water and finally royco.

  7. 7

    Boil for 30 minutes

  8. 8

    Serve with Ugali
