Boil or roast 3 tomatoes for about 10 minutes or untill very soft and soggy.

Drain off water and peel tomatoes, then mash them.

Add onion, pepper, salt, bit of black pepper and mix well

Tomatoes must be very soggy.

Heat oil in a frying pan, add garlic and fry untill they are light brown. Take care not to burn them.

Take the garlic off the fire and mix well with the tomatoes

Put some flour in a bowl.

Add 1/2 tablespoon of baking powder.

Let (flour, dough) sit for about 15 to 20 minutes.

Heat the oil. It must be very hot.

Turn the stove down or dough will burn.

Cut dough in triangle size portions then put in pot or deep fryer. Make dough thin but not too thin so it will rise.

Baste the dough with oil using a big spoon trying to get the dough to rise into a pocket
