Place a pot over medium heat and add half the coconut milk (about 1 cup).

When the coconut milk starts to simmer, reduce the heat and add the lemongrass and galangal.

Add the crushed shallots.

Add cilantro roots.

Add the chicken breast.

Add the king oyster mushrooms.

Add the tomatoes.

Add 1 teaspoon salt.

Add 1 teaspoon soy sauce.

Add coarsely pounded Thai chilies.

Add culantro (or extra cilantro).
