Ingredients

1 hour
4-5 servings
  1. (For poori):-
  2. 2 cupwheat flour
  3. 1/2 cupsemolina (suji)
  4. 1/2 tspsalt
  5. 1/2 tspred chilli powder
  6. 1 tsproasted fennel seeds powder
  7. 1 tbspoil for dough
  8. Water as required
  9. 1 tbspchopped coriander leaves or green chilli (optional)
  10. 1/2 tspcumin
  11. 1 cupsoaked urad dal
  12. 1/4 tspasafoetida
  13. 1/2 tspgaram masala powder
  14. 1/2 tspcoriander powder
  15. 1/4 tspamchur powder
  16. Oil for frying
  17. (For Aloo Sabji):-
  18. 5-6potatoes boiled
  19. 3Tomatoes pureed
  20. 1 tbspginger paste
  21. 2 tbspoil or ghee
  22. 1 tspcumin seeds
  23. 1/4 tspfenugreek seeds (methi seeds)
  24. 1 pinchasafoetida (hing)
  25. 1/2 tspred chilli powder
  26. 1 tspcoriander powder
  27. 1/2 tspturmeric powder
  28. 1 tspgaram masala powder
  29. 1 tspamchur powder
  30. to tasteSalt

Steps

    First grind the soaked dal.

  2. 2

    Take a large bowl add all the ingredients for poori mix well knead nice dough.

  3. 3

    Keep aside for 15 -20 minutes.

  4. 4

    Then make small balls and roll them and deep fry the poories till golden crisp.

  5. 5

    Drain out on kitchen tissue.

  6. 6

    For sabji:- peel the boiled potatoes cut into cubes.

  7. 7

    Take a pan or kadhai add oil, fry cumin seeds and fenugreek seeds for a second.

  8. 8

    Add tomato puree and ginger paste saute for 6-7 minutes.

  9. 9

    Add all spices mix well.

  10. 10

    Add 1.5 - 2 cup water.

  11. 11

    Add potatoes stir well.

  12. 12

    Add salt and simmer for 10 minutes then heat off.

    Serve aloo sabji and bedmi poori (bedai poori aloo)
