Ingredients

  • 1/2Kabocha, seeds removed ~ sliced
  • 1 tbspOlive oil
  • 1Kale, chopped
  • 1Yellow bell pepper, sliced
  • 1 tspOlive oil
  • 1 tspSmokey paprika, ground
  • 2 tbspBalsamic vinegar
  • 1 tspGinger, ground

Steps

  1. 1

    Heat oven 400°

  2. 2

    In a bowl place squash and add oil, toss and place in baking dish

  3. 3

    In the same bowl add kale, vinegar, seasoning and toss with remaining oil

  4. 4

    Place on top of squash, cover with foil and bake for 60 min
