Ingredients

3 servings

3whole chicken thighs, parted into 6 pieces
Salt and pepper
Garlic salt or 1 clove garlic
1large onion, diced
2 cupsPureed tomatoes
Roughly 1/4 cup soya sauce
Water
as neededCooking oil
Wooden logs or coals
1large disk for cooking

Salt in chicken thighs

Dice onions

Add just enough oil to disk to make it oily, add diced onions and seasoned chicken.

When chicken is nice and brown on both sides add soya sauce, pureed tomatoes and enough water to make the sauce thin enough. Simmer.

Serve with rice and tortillas

As a kid I told my teacher I'd grow up to be a chef, well that didn't happen but I'm a chef in my own kitchen and that's great.
