Pan fried Eggplant is a tasty accompaniment with Dal rice or Sambar rice. It can be eaten as it is as a starter too.

Wash the egg plant and cut it into slices. Slices should not be too thin nor too thick.

Now, add all the ingredients of marination masala and mix well.

Apply this marinade to each eggplant slice and keep aside

Mix 1tbsp besan and 1tbsp suji along with a pinch of hing, 1/4tsp red chilli powder and salt as reqd

Now coat egg plant slices with this mixture

Dust it on the other side too

Heat a pan.. spray 1tsp oil..

Now, place the egg plant slices carefully on pan and pan roast them both sides

Once the slices are roasted both sides take off the stove and serve
