Spanish Potato Omelette (Tortilla de Patatas)

Peel the potatoes and slice them very thinly. Rinse them.

Heat plenty of olive oil in a skillet over low heat. When the oil is hot, add the potatoes and cook them slowly. Add salt.

Beat 4 eggs in a large bowl.

When the potatoes are soft and break easily, turn off the heat. Use a slotted spoon to drain the potatoes and add them to the eggs.

Mix the eggs and potatoes together. In a small skillet, add 2 or 3 tablespoons of olive oil and heat over high heat.

Pour in the mixture and use a wooden spoon to shape it into a round omelette. Cook for a couple of minutes, then use a plate to flip the omelette.

Cook for another couple of minutes and reshape the omelette. You can flip it as many times as you like, depending on how well done you prefer it.
