I’m not Canadian, but I had some leftover mushroom soup from my baked pork recipe and needed to use it. So I researched traditional Poutine and came up with this combination.

I’m not Canadian, but I had some leftover mushroom soup from my baked pork recipe and needed to use it. So I researched traditional Poutine and came up with this combination.
Cooking Instructions
- 1
Bake or fry the potatoes according to your preference.
- 2
Empty mushroom soup into a saucepan and add the instructed amount of milk (normally one can full.)
- 3
Add the vegetables to the soup and cook till simmering.
- 4
Load plate with potatoes and ladle soup over the top.
- 5
Cover top with cheese and serve.

This is my variation of a classic hashbrown casserole (also known as funeral potatoes, but that name is a bit too morbid for the holiday table). I use a homemade condensed cream of chicken soup rather than canned for this recipe. The cornflake topping is optional, but I like the crunch that it adds to the overall texture.
