In a bowl add all ingredients except oil

Mix all the ingredients well with butter

To check if the quantity of butter is enough in the dough press some of it in your fist. If after unpressing the shape remains, then butter is sufficient

After mixing butter well add water to it little by little & knead the dough for mathri

For mathri dont knead soft dough

Cover the dough & keep it that way for atleast 10mins

Knead the dough once again

Now break the dough into smaller pieces (lemon size balls)

Now roll all the pieces into a cylindrical shape

Roll all the pieces in a long flat strip

Now carve out/cut out shape of petals on the strip as shown

Now start rolling it from one side as shown below

Now heat the oil in a kadai

To check if the oil has heated up as desired add a small piece of dough into it

Add few mathris in oil

Do not stir the mathri immediately upon adding them into the oil, let them fry a little.fry mathri on medium low heat

Once it's crispy, take out of oil

Transfer on paper napkin
