Scrap the bitter-gourd,remove the seeds and cut into halves.

Transfer this into a bowl,add half teaspoon of salt and rest for 30 minutes.

After that wash the bitter gourd and keep it aside.

Now heat up 3 tbsp of oil in a pan and fry the eggplant in it until it turns golden brown.

Remove it from heat and keep it aside.

Heat 2 tbsp oil in heavy karahi add mustard seeds, cumin seeds, fenugreek seeds and stir for 2 minutes.

Now add onions fry until it turns golden brown.

Add turmeric and stir well.

Now add the fried bitter gourd and eggplant in it and stir well.

Now add salt,red chilli powder,coriander powder,dried mango powder and mix it well.

Cook for 5 to 7 minutes on medium heat.

Now serve hot.
