We usually make the normal pav bhaji by using the vegetables & spicing it with pav bhaji masala ,Here lets give a twist to usual pav bhaji by adding some greens in it.

Steps

Add cauliflower, potatoes and green peas in pressure cooker, cook until tender

Add spinach to Boiling water for 5 mins, drain excess water. Add cold water to spinach

Add blanched spinach, mint, coriander leaves, green chilles, ginger, garlic in mixer grinder and grind this to smooth paste

Heat 1 tbsp butter and oil in a wok, once oil is heated add chopped onion fry till translucent, next add chopped capsicum and fry well

Next add chopped green tomatoes, add salt fry till tomatoes become tender.add chilli powder,turmeric,and pav bhaji masala and fry for 2 mins

Add spinach puree fry till raw smell disappears

Next add boiled mashed potatoes, cauliflower and green peas add some water cover and cook for 10 mins

Switch off the flame, add lemon juice to this

To fry pav heat some butter in a pan add 1 tsp chilli powder and finely chopped coriander leaves and fry pav for 5mins

Transfer pav bhaji in a bowl add chopped onion and chopped tomatoes and garnish with butter and grated paneer

Serve Hariyali pav bhaji with fried pav and chopped onion tomatoes,cucumber and lemon
