Ingredients

10 minutes
4 servings
  1. 4large 1pieces Seer fish
  2. 2 spoonsOregano
  3. 1 spoonRed chilli flakes
  4. 1/2 spoonBlack pepper
  5. 4 clovesMashed garlic
  6. 1 tspFat free butter
  7. 1/2 tspOlive oil (optional)
  8. 2 tspChives finely chopped (optional)
  9. 1 pinchTurmeric
  10. to tasteSalt
  11. as neededFoil enough to bag the fish pieces individually

Steps

  1. 1

    Wash the fish with turmeric and water. Pat dry with tissue.

  2. 2

    In a bowl mix all the ingredients.

  3. 3

    Using a brush or your hands apply the mix on both sides of the pieces.

  4. 4

    Cut foil into 4 rectangular pieces. The size should be 3 times larger than the fish.

  5. 5

    Place a piece of fish on a piece of foil. Now wrap it like a bag/pouch and seal the edges tightly. Do not fold it flat.

  6. 6

    Heat water in a steamer. Once hot place the fish bags on the stand. You can keep 2 at a time or all 4 depending on the design and size of your steamer. Keep flame on medium or high. Close lid.

  7. 7

    Open after 10 mts. using tongs remove the foil pouches. Place on plate and let it rest for 5 mts.

  8. 8

    Slowly open the foil from top so that the juices don't flow out. Best to eat from pouch itself.

I never intentionally learn't to cook. I would love to watch my grandmum cook when I was a child. The ingredients, aromas, techniques and method is kind of etched in my mind. I am happy when I cook. It takes me back to some of my best days with my most favorite person.
