Ingredients

2 servings
  1. Vegetables:
  2. 1/2 cupchopped carrot
  3. 1/2 cupchopped beans
  4. 1/2 cupchopped okra
  5. 1/2 cupchopped cabbage and cauliflower
  6. 1/2 cupchopped raw papaya
  7. For Bagaar:
  8. 1/2 cupfinely sliced onion
  9. 1/2 cupchopped tomatoes
  10. 1/2 tspNigella seeds (Kalonji)
  11. 5-6 podsGarlic finely chopped
  12. 1 bunchcurry leaves
  13. 2 tspCoconut oil
  14. For gravy:
  15. 1/2 cupCashew nuts
  16. 5-6green chillies
  17. 1/4 tspTurmeric powder
  18. 1/4 cupcoriander leaves
  19. 1 tbspfresh cream
  20. 2 tspcoriander powder
  21. 4 tbspkasuri methi
  22. 1lemon juice
  23. to tasteSalt
  24. Water as required

Steps

  1. 1

    Make a fine paste of cashew nuts, green chillies, coriander leaves, Turmeric powder and keep aside

  2. 2

    Heat coconut oil in a pan. Add Nigella seeds. Wait for a minute

  3. 3

    Add curry leaves and garlic. Fry well..

  4. 4

    Add onion.. saute well.. cook till transparent. Add little salt

  5. 5

    Then Add tomatoes and fry till it's tender.

  6. 6

    Add all vegetables and fry for 7-8 minutes or till the raw smell gone.

  7. 7

    Add above ground paste and fry for 2-3 minutes.

  8. 8

    Add water and cook till vegetables done.

  9. 9

    Add coriander powder, lemon juice and mix well. Check seasoning.. Add salt if required.

  10. 10

    Put in kasuri methi and mix well.

  11. 11

    A minute before switching off the stove, add fresh cream and mix well.

  12. 12

    Serve hot with rice / naan

This looks delicious. Its a mix of 2 of my favorite Indian meals Methi and Korma. Question-what kind of cream do you use?
