  • 3 cupsall purpose flour
  • 2table spoons baking powder
  • 1 cupsugar
  • Pinchsalt
  • 1 table spoonBicarbonate of soda
  • 1 cupvegetable oil
  • 4eggs
  • 4 cupscarrots
  • 3 table spoonginger
  • 1 tspvanilla essence

Steps

45 mins
  1. 1

    Whisk eggs in a large bowl till foamy

  2. 2

    Sieve dry ingredients in another bowl.

  3. 3

    Add carrots and oil to eggs and mix well.

  4. 4

    Incorporate oil into the mixture till done.

  5. 5

    Bake for 45 mins.until skewer comes out clean. Then serve.
