I worked at a Mexican restaurant years ago and this is my version of their queso dip.

I wanted to make some dip but did not have a can of chili, but I did have left over taco meat and beans from our dinner the night before. It turned out great.

Super easy and super cheesy! Perfect for game day! Especially alongside homemade thick assed salty, crispy flour tortilla chips. Also, ice cold Mexican beers in frosty mugs!Please excuse the photo bombs by my wife Tammie. She just gets SO stupid excited when I make this dip for her and her friends for the weekend games.Granted, she's a dork. But know this - she's MY dork! ;0) Tho I must admit, I do LOVE making that sweet little baby girl smile every time!Anyway, feel free to add fried and fully drained ground beef and hot sauce to this dip for extra flavor and protein! Your favorite chili goes great with this as well! I promise you, it's freaking delicious! Fresh pretzels work great with this dip as well!

My youngest seven year old student decided she wanted to make a special dish for her daddy and his friends for the Saints/Patriots exhibition game. This is the hot appetizer she finally decided upon.Her dip was absolutely cheesy, creamy, flavorful, spicy, thick and beyond delicious! Talk about an authentic taste of our US Route 66! Excellent work sweet baby girl! Without a doubt, your dip was adored by all! The boys couldn't get enough of it - as evidenced by the lack of any leftovers!Feel free to add to her forgiving recipe as you choose to.
