Redvelvet muffins with frosting#authors marathon

Preheat oven at 180 degrees

Add the egg and vanilla and beat until everything is well incorporated.

Cream butter n sugar until light n creamy.

In a separate bowl sift flour,cocoa salt.

Mix the food colour with buttermilk.

Add the flour in 3 additions alternating with buttermilk.mix well scrapping the side of the bowl with a spatula to remove any unmixed ingredients.

Add the vinegar and bicarbonate of soda.Beat until well mixed.

Spoon the mixture into paper cases 2/3 full and bake in preheated oven for 20_25 mins.

Cool in a wire rack.

For frosting : Whip 1cup heavy cream until it doubles in size n thickens. Top your Muffin's n dust with cake Crumb's.
