Slice the tomatoes, pepper,onions.

If using carrot and green pepper,clean and dice and set aside

Break and whisk eggs and set aside

Open your can of sardines if using

Put frying pan on fire making sure its dry without any trace of water in it.

Pour in your vegetable oil,allow to heat a little,pour the diced onions, tomatoes and pepper.stir fry for 1mins,pour in the diced carrot and green pepper (if using),stir fry all for 2-3mins depending on the quantity you using.

Add the maggi and stir.add the sardines (if using).stir thoroughly

Add the whisked eggs and turn gently,then allow to fry on medium heat.

Using your flat frying spoon,turn gently to the other side. Check for salt.if not tasty enough,add another cube of maggi (not salt).distribute evenly and turn gently to the other side without breaking the whole egg.

Can be eaten with boiled/fried yam,potato, plantain etc
