Garden-egg and Egg sauce

I have always cooked my gardenegg sauce in a particular way of boiling garden like our mothers taught us, yesterday I was just like, can't I add egg to the sauce and skipped the boiling of gardenegg. Trust me, it came out just fine with a bit of sour-sweet taste

I have always cooked my gardenegg sauce in a particular way of boiling garden like our mothers taught us, yesterday I was just like, can't I add egg to the sauce and skipped the boiling of gardenegg. Trust me, it came out just fine with a bit of sour-sweet taste

Blend the tomatoes, peppers and onion together and set aside, also chop some onions and set aside.

Rinse and Cut the garden eggs into bite-sized pieces and place in a blender to blend into a chunky consistency.

Place a saucepan on heat to get hot, add palm oil into it, add the chopped onion until you have the translucent consistently for the onion, then add the blended tomotoes, pepper and onions and fry for like 5minutes

Add crayfish, seasoning and salt and leave for about 2minutes

Add the blender garden-egg and fry till the sauce thickens

Slowly add the beaten egg and reduce the heat. Stirs to afford burning.

Leave the sauce to simmer for few minutes send stir again

Take off the heat and serve. I eat mine with potatoes, because am a potato lover while my husband used yam
