Ingredients

  1. 1carrot
  2. 1eggplant
  3. 2capsicum
  4. as neededcurly flowers
  5. 1size cabbage chopped
  6. as neededchooped beans
  7. 1raw banana
  8. 2Arbi
  9. 2lady fingers
  10. 100 gmpumpkin
  11. 1 Bunchspinach
  12. 1Bottle gourd
  13. 1reddish
  14. 4tomatoes
  15. 2potatoes
  16. as neededbeans
  17. As neededgreen peas seeds
  18. 11/2 tspturmeric powder
  19. 1 tspRed chilli powder
  20. to tasteSalt
  21. 2 tspcoriander powder
  22. 2 tspgaram masala
  23. 2 tspamchur powder
  24. 2chopped green chilli
  25. as neededCoriander leaves chopped
  26. 2buy leaf
  27. 2 tspcumin seeds
  28. 1 pinchasafoetida

Steps

  1. 1

    Wash and pat dry all veggies than chopped them.

  2. 2

    Cut raw banana, potatoes eggplant. Keep in water in bowl.

  3. 3

    Heat oil in a pan add cumin seeds and hing,add buy leaf, turmeric powder, coriander powder add chopped green chilli, ginger paste, slightly roasted the veggies,keep flame low.

  4. 4

    Add chopped veggies,add salt or red chilli powder mix well cook and cover it on medium flame for 5-6 minutes. Then check sabji.. Add chopped tomatoes mix well and cover again for 5-6 minutes.

    When all veggies soft then add garam masala and coriander leaves fry them 2 min.

  6. 6

    Annakoot veg is ready to serve with chapati or puri....
