Shahi Tukde is again one of the most prominent Desserts in Indian Cuisine. A Quintessential Dessert and all time favourite of many amongst us. Hyderabadis call it Double ka Meetha. And elsewhere in Northern India,it's called as Shahi Tukda. Whatever the name it is called as, it still is the best and the most loved. It is traditionally made with bread that is dried and then deep fried. But here I gave a twist to this recipe by bringing the cake rusk into the picture and shallow fried it in butter making it a bit healthy and light on our stomach. Do try it out to believe it. Enjoy the festival season with this amazing fusion Dessert.

Ingredients

30 minutes
6-7 servings
  1. 1 packetreadymade milk cake rusk
  2. 3-4 tbspbutter
  3. 3 tbspMilk powder
  4. 1 tspCardamom powder
  5. 1 litremilk
  6. 5-6 tbspmixed nuts slivered
  7. 4-5saffron strands
  8. 3/4 cancondensed milk

Steps

30 minutes
  1. 1

    Boil milk and reduce it to half of it's quantity bringing it to a rabri consistency. Mix the milk powder in a little milk to avoid the formation of lumps before adding it to the simmering milk.

    Stir in condensed milk and cardamom powder too. Simmer until it's done. Set it aside to come down to the room temperature before refrigerating it.

    Next, shallow fry the cake rusk in butter, few pieces at a time in a non-stick pan.

  4. 4

    To serve, place the rusk side by side in a large platter and pour the chilled rabri over it. Garnish it with loads of slivered nuts. The cake rusk soaks up the chilled rabri so well that it just melts in your mouth right away.

  5. 5

    Slice it in triangles and serve this amazing dessert to your family and friends thus enjoying this festive season to the fullest.
