2 SticksRipe plantain
3red onions
5 PiecesPepper
Chicken/fish(seasoned,cooked and fried
1Cooking spoon veg oil
1 TspCurry powder
1 TspThyme
1 TspCinnamon powder
Knorr
to tasteSalt

Cooking Instructions

50 Mins

Wash, peel,salt and fry ur plantains and set aside.

Wash ur onions and pepper and blend with little water.

In a pot,heat up oil and pour in ur blended onions.

Add knorr, curry,thyme,Cinnamon and salt and simmer for abt 10 mins or till thick.

Add ur chicken and fish and cook for 2 mins.

Ur Onion stew is ready.

Serve with ripe plantain,yam or rice.

Dealing with a pretty brutal cold, so I just wanted some comfort food. This turned out so good. Flavors were very intense. Of course I didn't invent this recipe, but this is my take on it. I used roasted nuts instead of peanut butter. And where I live I can't get my hands on scotch bonnets. I didn't want the flavor of habanero, so I used yellow chile peppers. Still have a little kick, but a nice non overpowering flavor.
